Mogrosides: The secret to no-calorie sweetness
Monk fruit derives its intense sweetness from naturally occurring sweet constituents called mogrosides.

Higher potency equals less cost in use.
There are five types of mogrosides in monk fruit. Mogroside 5 (Mog V) is the most intensely sweetsweetness intensity. The more Mog V in the monk fruit extract, the higher the sweetness potency. A monk fruit extract with a higher sweetness potency gives food and beverage manufacturers a better cost-in-use benefit.
Tate & Lyle offers two different PUREFRUIT™ products:

PUREFRUIT™ Select

  • A natural high-potency sweetener extracted from monk fruit with a high-quality sweetness and flavour profile without the distinctive bitter aftertaste associated with some natural sweeteners

  • Contains at least 48% (48-52% range) mogroside V

  • Suitable for formulation at high sweetness levels

  • Stable to processing and storage over a wide pH range, making it ideal for use in low-pH systems such as beverages and in neutral-pH foods and beverages

  • Readily soluble

PUREFRUIT™ M40

  • A natural high-potency sweetener extracted from monk fruit with good sweetness quality

  • Contains at least 40% mogroside V

  • Stable in processing and storage over a wide pH range, making it ideal for use in low-pH systems such as beverages and in neutral-pH foods and beverages

  • Readily soluble
